What iso do I need to dnload to run CentOS on a SUNFire V120? And where do I dnload it from?

The V120 is an Ultrasparc based machine and since Centos only builds on Intel (and equivalent) processors, you will not get Centos for this server.
There are, however, other Linuxes available for your architecture. See Debian or Gentoo for example.

Thanks for the reply. I'm slightly confused because the products page (http://www.centos.org/product.html) says Sparc is supported.
I'll take a look at the alternatives you suggested, but would much prefer to use centos.
