How would I go about getting CentOS 8 as a VM option in GCP/GCE? or creating my own CentOS 8 VM to run on GCE?
Any guides (README's, documents) there or contacts on how to get this done?

If CentOS 8 is not available as an image on GCE, then there is nothing you can do besides reach out to GCE support and request it be added, just as RHEL 8 has been added.
