How do I update the default Firefox (3.6) to the latest one (8)?

The best way to go about this is to download it manually and install it, then you can create a short cut in your menu.

If you will need to create your symlink for java to work correctly as well. This is the way I have done mine it works great.

I downloaded it but I don't know what to do after that; there's no "exe" file like in Windows. Again, I'm still pretty new to Linux.

The [url=http://rpms.famillecollet.com/]Remi[/url] repository provides a Firefox 8 RPM package built for CentOS 6. See the [url=http://wiki.centos.org/AdditionalResources/Repositories]CentOS Wiki[/url] for instructions for using third-party repositories.
