Well, my findings:
PHP5.5 - Remi repository: http://rpms.famillecollet.com/
Nginx:

MariaDB is yet to be found

Except in the CentOS base/updates repos...
The future appears to be RHEL or Debian. I think I'm going Debian.

Mariadb has replaced mysql in CentOS 7. It's part of the core CentOS repositories.
The future appears to be RHEL or Debian. I think I'm going Debian.

Core contains version 5.5 only. But the actual one is 10.1 of MariaDB currently. I want it

Well, there are so many people around you. Including friends, enemies, strangers, passerbies... How do you know who to trust?
You read forums, ask friends for recommendations, look at official articles on official sites etc.
