I stupidly deleted etc/dnf/vars/appstream
and get the following Error:
Failed to download metadata for repo 'appstream':
Cannot prepare internal mirrorlist: No URLs in mirrorlist
Can someone please copy and post the correct name and content of that file from their CentOS 8
or CentOS Stream system?

Are you sure the variable you're looking for is named appstream? Look it up in /etc/yum.repos.d/CentOS-AppStream.repo
The variables there start with dollar sign ($). $releasever and $basearch are always defined. All the others need to be specified in /etc/dnf/vars.
If the variable you actually mean is stream, then its value should be 8-stream.
