Not sure what other info you need, but i will try and convey what i am trying to do.
I have a Dell PowerEdge R710, with 6x SAS drives, configured with the hardware RAID controller as 2 drives on RAID-1 (for OS), and 4 drives on RAID-5 (for data).
install media is a 16GB USB 2.0 flash drive, with CentOS-8.1.1911-x86_64-dvd1.iso copied on via "dd".
this was formerly a FreeNAS server, that was barely used, so in an effort to conserve electricity, i am combining my general server (web, email, ftp, and so on) and my file storage server (SMB, and NAS). the general server runs CentOS7, so i have used CentOS before.

ok, so i have configured the USB drive in the BIOS as a hard drive, and it boots the USB drive fine. but unfortunately, it does not detect any drives to install to, though the BIOS reports two virtual drives available.

What's your RAID card - it may be too old to be supported.

Try finding the device ID pairing [xxxx:yyyy] of your controller and check against the list of unsupported hardware in RHEL 8. If yours is one of them, see this ELRepo blog for assistance.

device id i found, 1028:1000, didn't seem to be on the list.

Device [1028:1000] uses the e1000 driver, which is a network device, not a controller.

the numbers i got from it are 1028, 1000, 1F0C, and 60.
don't remember the order, i will check tomorrow, as i am experiencing severe mental health issues at the moment.

I believe it's 1000 and 60. Device [1000:0060] uses the megaraid_sas driver. This one is on the list of removed hardware in RHEL 8. However it is supported by the ELRepo package. Use the appropriate DUD image to install 8.1. There is a tutorial video which I found quite useful.
