When I try "dnf install yumex", it gives the following:

(try to add '--skip-broken' to skip uninstallable packages or '--nobest' to use not only best candidate packages)
I tried to separately install these missing packages,
they also require packages which are not installed and so on ....

There is no nux-dextop repo for CentOS 8 (and probably won't be one at all) but you have installed the CentOS 7 one. That's not going to work and may even break things. Remove it. I don't see yumex in any other repo and since yum is gone from CentOS 8 - it's now dnf not yum - I am not sure it would be possible to provide it at all.
The future appears to be RHEL or Debian. I think I'm going Debian.

According to Red Hat trainings - they do not expect us to use dnf at all, but the yum (which is actually the same).

Since yum is just a symlink to /usr/bin/dnf-3 I think it's safer to assume that it's better to use dnf in the first place. And since it is dnf under the hood anyway, I don't think you can expect yumex (yum extender) to be compatible with it.
