Please be aware that CentOS Stream is not suitable for production work. If you aim to run this in production then look at one of the other RHEL clones like Rocky/Alma/OEL or even RHEL itself.
The future appears to be RHEL or Debian. I think I'm going Debian.
Info for USB installs on http://wiki.centos.org/HowTos/InstallFromUSBkey
CentOS 5 and 6 are deadest, do not use them.
