Patch kernel to newest version

Hello, please help me, I have production server with few websites on it, and this is like this:

Really new to CentOS and RedHead, Plese give me an guidance for upgrading this OS to latest possible "patched" kernel,

Run yum update
The future appears to be RHEL or Debian. I think I'm going Debian.
Info for USB installs on http://wiki.centos.org/HowTos/InstallFromUSBkey
CentOS 5 and 6 are deadest, do not use them.
