I really need to know version below packages in Centos 7.8 and Centos 7.9. I totally want to know about differences in these Distribution?

I'm not convinced about the perceived "need". The "7.9" is simply a security/bug/feature update to "7.8".
There is only one "CentOS 7" Distribution. Its repositories do currently contain packages that are based on RHEL 7.9 content.
Some of those packages are identical to what they were before 7.9.
Some contain backported changes; the major/minor version remains the same.
Some (but not many) might have been rebased.

You can list the repository content (to see "version numbers") with yum list (or perhaps with yum check-update)
or by browsing the URL.
The version of repositories that were based on RHEL 7.8 have been moved to CentOS Vault. Still browsable.

You can also use rpm -q --changelog $package | less for each package that you're interested in and then look at the entries in that that are dated post-7.8.
The future appears to be RHEL or Debian. I think I'm going Debian.
