I installed subscritpion-manager & gui
But i don't know how to lunch the software in gui mode?

I'm not aware that Subscription Manager is terribly functional on CentOS as there are no subscriptions to manage, the packages are either available or they aren't, there are no repos to subscribe to, only to install/enable or disable.
However, having said that, there is a subscription-manager-gui.x86_64 package and that contains /usr/share/applications/subscription-manager-gui.desktop which would be an app that should appear on your Main Menu

The future appears to be RHEL or Debian. I think I'm going Debian.
