Hi all
First a want thanks everybody to being part of this great project

Next week I will audit cluster platforms (centos6/7) , I would like to ask you if someone have a checklist or procedure to do this operation in the best manner.

Start with : CentOS 6 is EOL for more than 1 year and should not be used. Next, check if your CentOS 7 servers are using 7.9.2009 plus all the latest updates and if not, yum update.
The future appears to be RHEL or Debian. I think I'm going Debian.

CentOS 5 and 6 are deadest, do not use them.

Well any server riddled with vulnerabilities is still riddled with vulnerabilities whether it's a physical one or a VM. If it's critical and you want support then convert it to RHEL 6 and pay for an EUS subscription or whatever RH call it these days and you will get another couple of years (?) of support for it.
