Nessus is flagging the python 2.7.5 version that's in our CentOS 7.9 systems as a "critical" finding.
When I tried to remove it on a test system with yum, it generated a list of dependencies a mile long.
Is it possible to remove it, or is it too baked into the core of the system to get rid of it?

You cannot remove python 2.7.5 from CentOS 7 as it's used by all the system tools like yum. You can safely ignore the nessus finding since python 2.7.5 is maintained by Red Hat not by python.
The future appears to be RHEL or Debian. I think I'm going Debian.
