Centos 7 and a New Linux user

I am a new Linux user but not new to technology. I live, breath and work in the Windows world but getting frustrated with security among other things with windows.

I am looking to convert as Much as possible to Linux including my server and router. I have already converted my Usenet PVR stuff to Mint 17. And now looking to work on migrating my server It was suggested to look at Centos as a friend uses it for a SAMBA server for his work. So I am looking in to it as well as Ubuntu.

So with that all said please be easy on me. . . . I have already installed Centos 7 with the section that says server with GUI and I installed most of the options in the right panel. So now I am reviewing what I see in the menus and stuff and not sure what I can do with setup. I don't see any documentation for Centos 7 so I can try and learn what I can do. I am a visual person and like gui's but am willing to learn. . . .

Can any one point me in the right direction for Centos 7 File server use?

Sure, you can use the official RHEL documentation.
You can read them online or download them in pdf or epub format.
