Booting from USB live CD, any chance to modify /etc/fstab?

Hi,

I use USB live CD image to boot CentOS 7 and I like to keep the boot image in the USB. Appreciate your advice for following questions:

(1) Is there any way to change run level 3 to boot from text, not from X window?

(2) Is there anyway to modify /etc/fstab, create a permanent HDD mount point either under "/" or /home/liveuser?
