Do you have X installed on the server? If not, you need it.

The easiest way to run vncserver is to start it up in graphical mode, otherwise you have to figure out the "display" of the currently running X server, and tell vncserver to bind to it.

Dovecot by default does not run under xinetd, it has its own daemon. I would recomend you use this:

service dovecot start

to start the service. It will start the imap, pop3, etc listening daemons.

SuSE linux is a product of Novell, so you might want to look into using that as well: http://www.novell.com/linux/suse/

I'm note posotive how CentOS will work for you as a desktop enviroment, but it would definatly be able to fill the shoes as a server.
