Minimal will work as a basic system and keeps the install size small. It's the best choice if you're comfortable with using the command line. Assuming you're using GNOME, try the following:

- head over to Your Name in the top right corner
- select Settings
- under Personal, select Online Accounts

Select the offending account in the list and remove it using the minus icon at the bottom

Just to clarify: all packages that are loaded and the server configuration will be exactly the same in all (non-rescue) boot options, but we have a choice of kernel, is that right?
