CentOS is definitely not only a server OS. I run it on my laptop and it runs great. I also run it on my storage server and it runs great there. I don't think you'll have any issues running CentOS on your desktop. I also have no comment on what your boss said about Debian, though I too think it would...

Make sure that your firewall lets ssh traffic in. Also, you should not be ssh'ing into your box as root. Or at least that is not advisable.
