Just to confirm, reverting the NFS server to kernel-2.6.18-128.7.1.el5 solved this issue.

It is to do with the settings of my /etc/nsswitch.conf. If I remove the [!NOTFOUND=return] statements then it works as expected.
Thanks very much for the help. Now I just need to ensure that I can still log into the system as a local user even if the LDAP server is down.
