As long as your shim-x64 package that is being updated is version 15-8.el7 or later, you should be fine.

That is my experience as well. You have to do some short manual commands to bring the network up to use yum.

The ISO made into a USB stick works great for recovering. That's what I used when this happened to me on my CentOS 7 system on Thursday.
