This is not about CentOS vs. Ubuntu. It's just that CentOS 7 happens to have an older version of util-linux. E.g. last in CentOS 8 Stream has the same options as in Ubuntu 18.04. On CentOS 7, you can filter the output with gawk. See 9.1.5 Time Functions in the GNU Awk User’s Guide.
